DESCRIPTION:Con il termine mousse\, mutuato come molti altri dal linguaggio della cucina francese\, si intendono quelle preparazioni che assumono una consistenza schiumosa grazie all’inglobamento nella massa di microscopiche bolle di aria.\nLe mousse\, per lo più dolci\, possono avere anche un carattere sapido e possono essere servite come gustosi antipasti. \nIn questa lezione Paola Lanini e Antonella Comite\, le titolari di Cuochechepassione\, insegneranno ad utilizzare tecniche di preparazione diverse per la preparazione delle diverse mousse\, come la meringa italiana e base semifreddo\, per un uso sicuro delle uova.
