DESCRIPTION:Sono rari i casi in cui la preparazione di una pasta non preveda che che venga ripassata in padella\, ma qui andiamo oltre perché la pasta viene cotta come fosse un risotto\nUna tecnica particolare che rende i piatti particolarmente cremosi grazie all’amido rilasciato in cottura. Molto semplice da mettere in pratica\, questa tecnica però non è adatta a tutte le ricette. In questa lezione prepareremo una fregola cun cocciula ovvero con le vongole\, degli spaghetti “gialli” risottati con broccolo romanesco e olive itrane e una pasta mista risottata allo zafferano con guanciale di cinta senese e stracciatella
